  • Tonic water: We love the subtle floral taste of elderflower, so we opted for an elderflower-flavored tonic water, but you can use plain tonic water, club soda, or sparkling water in this recipe. Line the pastry case with foil and a thin layer of baking beans and bake for 15 minutes. Remove the foil and beans and bake for a further 5-7 minutes.
