Enjoy this filling and colorful salad for lunch or dinner. The dressing gets made in the same bowl that the salad is tossed in, so the greens absorb every bit of flavor.
Ingredients:
2 cups cooked chicken breast, chopped
4 cups mixed greens (such as kale, spinach, arugula, or romaine)
1 cup cooked quinoa
1 avocado, diced
1 cup cherry tomatoes, halved
½ cup cucumber, diced
¼ cup red onion, finely chopped
¼ cup feta cheese, crumbled (optional)
¼ cup roasted sunflower seeds or chopped almonds
1 tablespoon olive oil
2 tablespoons lemon juice (or balsamic vinegar)
Salt and pepper to taste
Instructions:
Prepare the ingredients: Chop the cooked chicken breast into bite-sized pieces. Dice the avocado, cucumber, and red onion, and halve the cherry tomatoes.
Cook the quinoa: If you haven't already, cook the quinoa according to package instructions and allow it to cool.
Make the dressing: In a small bowl, whisk together the olive oil, lemon juice (or balsamic vinegar), salt, and pepper.
Assemble the salad: In a large bowl, add the mixed greens, cooked quinoa, chicken, avocado, cherry tomatoes, cucumber, red onion, and feta cheese (if using).
Add the crunch: Sprinkle the roasted sunflower seeds or chopped almonds on top.
Toss and serve: Drizzle the dressing over the salad and toss everything together until well combined.
