Chicken Noodle Soup
This classic chicken noodle soup is a comforting staple, featuring tender chicken, hearty vegetables, and egg noodles in a flavorful broth. It’s perfect for warming the soul on a cold day.
Ingredients:
1 lb boneless, skinless chicken breast
6 cups chicken broth
2 cups egg noodles
2 carrots, sliced
1 onion, chopped
2 celery stalks, sliced
2 cloves garlic, minced
1 teaspoon thyme
Salt and pepper to taste
2 tablespoons olive oil
Procedure:
In a large pot, heat olive oil over medium heat and sauté onion, garlic, carrots, and celery until softened.
Add chicken broth and bring to a boil.
Add chicken breast and thyme, reduce heat, and simmer for about 15-20 minutes until chicken is cooked through.
Remove chicken, shred it, and return it to the pot.
Add egg noodles and cook until tender. Season with salt and pepper to taste, then serve hot.
